Covington, VA (Sept. 1, 2026)— Faithful Bakes and Deli will soon be opening its doors at 356 West Main Street in Covington, bringing with it a delightful blend of traditional and health-conscious baked goods and deli offerings. Owned by Faith Gordon, the new eatery will be a haven for those who appreciate a delicious cupcake or scrumptious sandwich, no matter their dietary restrictions.
Gordon's journey to her own bakery and deli began when she was —as those of us in the country like to say—"knee high to a grasshopper." "I have been baking since I was old enough to stand on a stool and be able to see the top of the countertop," she noted during our interview. "Both of my grandmothers were amazing bakers and they kind of like showed me and got me interested in it [baking], and it's something, I've literally done it my entire life, and I have always loved it." Since then, Faith has dedicated her life to perfecting her craft. After finding success at the Covington Farmer's Market—where the customer demand for her goods skyrocketed—Faith made the decision to scale up her business, leading to the opening of her very own bakery and deli.
Joining Faith in this exciting new business venture is her friend Sierra Cole, another experienced baker who specializes in gluten-free products. Sierra's expertise was born out of necessity when her brother was diagnosed with celiac disease. Together, Faith and Sierra have crafted a menu that caters to a variety of dietary needs, including gluten-free and diabetic-friendly options. This collaboration is not only professional, but personal, as both women have family members with dietary restrictions. Gordon's mother is diabetic, so the bakery/deli owner is all-too familiar with the challenges one faces to find good options when one has limited on their diet.
According to Gordon, there are many delicious options that will be available at the bakery and deli including build-your-own sandwiches, soups and salads, baked goods, a self-service coffee bar, and even a mini store.
For build-your-own sandwiches, customers merely choose their own meat (furnished locally from Bartley's Meat Market), cheese, and toppings, while simultaneously enjoying a wide variety of options like spinach wraps, keto wraps, and fresh vegetables from Faith and her stepfather's own gardens. All soups, salads, and salad dressings will be made in-house with fresh and local ingredients. Baked goods in the form of cake slices, pastries, sourdough bread, cupcakes, and (Faith's specialty) cinnamon rolls will be served. Finally, a mini store housing Gordon's house-made breads and—later—locally furnished jams and honey will all be available in the mini store.
The bakery—starting out— will be open seven days a week, starting at 8:00 a.m., with extended hours on Mondays, Wednesdays, and Fridays. The anticipated closing times are 4:30 p.m. on Tuesdays and Thursdays, and between 5:30 and 6:00 p.m. for the remaining days, minus Sunday when she anticipates being open 10:00 a.m.—2:00 p.m.
Faith Gordon hopes that Faithful Bakes and Deli will have a soft opening on September 11th, a date chosen to honor Fire/EMS, military, and first responders, who will all receive an 11% discount that day. While the mini store will open simultaneously, it will not yet be fully stocked, though pastries, sourdough, and other in-house items will be available. The Journal will be following this business closely and will update readers should that date change in the future.
